6 boneless chicken breasts, pounded thin 4 oz. chopped green chile 4 oz. chopped black olives 3/4 c. grated Monterrey Jack cheese 3/4 c. grated cheddar cheese beaten egg crushed tortilla chips 1/3 c. butter or margarine 1/4-1/2 tsp. cumin 1/4-1/2 tsp. chili powder Combine green chile, black olives, Monterrey Jack cheese, and cheddar cheese. Fill the chicken breasts with the mixture. Roll up and secure with toothpicks. Roll filled breasts in beaten egg and tortilla chips. Melt butter, cumin, and chili powder. Drizzle mixture over chicken breasts. Bake at 375 degrees for 45 minutes or so. Just before serving, top chicken with grated cheese and melt. Serve with sour cream, salsa, and/or guacamole.
