SPINACH QUICHE

(Serves 8 main course or 60 appetizers)

1/2 c. butter or margarine
10 eggs
1/2 c. flour
1 tsp. baking powder
1 tsp. salt
1 pkg. thawed chopped spinach
1 8-oz. can seeded chopped chiles
1 lb. shredded cheese (cheddar, Jack, Mozzarella, Swiss, or whatever
you prefer)

Preheat oven to 400 degrees. Melt butter in a 9x13-inch pan.

Beat eggs and mix in flour, baking powder, salt, drained spinach,
chiles, and cheese. Pour into pan.

Bake for 15 minutes at 400 degrees. Lower heat to 350 degrees and bake for 35-40
minutes more.
