2 Tbsp. butter 1 1/2 lb. ground beef 1 c. chopped onion 1 Tbsp. flour 1 6-oz. can tomato paste 1 tsp. salt 1 tsp. chili powder 1/8 tsp. pepper 1 c. cubed cheddar cheese 1/2 c. sliced olives 1 18-oz. pkg. corn muffin mix In a large skillet melt butter. Add beef and onion and cook until beef is lightly browned. Stir in flour. Add tomato paste, salt, chili powder, and pepper. Remove from heat. Add cheese and olives. Spread evenly over bottom of a 9x2-inch baking pan. Prepare muffin mix according to package directions. Spread over beef mixture. Bake in a preheated 400 degrees oven for 30-40 minutes. Let stand 5 minutes. Loosen around edges and invert onto serving platter.
