2 cans creamed corn
3 eggs, lightly beaten
1/2 c. green or red pepper, chopped
1 Tbsp. red pimento, chopped (optional)
1/2-1 can green chiles, chopped (optional but a tasty addition!)
1/2 c. vegetable oil
1 box Jiffy cornbread mix (or similar brand)
Mix all ingredients and bake in a greased 9x12-inch baking dish at
350-375 degrees for about 1 hour.
