1 Tbsp. olive oil 1 lb. frozen cauliflower florets 1/2 c. breadcrumbs 1/4 c. grated Parmesan cheese 1 large egg 2 Tbsp. chopped fresh parsley 1/4 tsp. garlic powder 1/4 tsp. black pepper Preheat oven to 400 degrees. Line a baking sheet with parchment paper and brush with olive oil. Microwave cauliflower according to package directions; cool to room temperature. Place cauliflower on a clean dish towel, roll it up and wring it out to extract as much moisture as possible. Transfer cauliflower to a large bowl and break apart florets. Add breadcrumbs, Parmesan cheese, egg, parsley, garlic powder, and black pepper. Using your hands, combine until mixture holds together. Scoop 1 Tbsp. mounds of cauliflower mixture onto prepared baking sheet, forming each into an oval-shaped tot. Bake for 30 minutes, turning halfway through. Serve warm.
