2 lbs. small red potatoes
1 c. finely chopped ham (5 ounces)
2/3 c. finely chopped green bell pepper
1 c. finely chopped celery
2/3 c. finely chopped red onion
1/3 c. white wine vinegar
1 Tbsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. chopped fresh parsley
Place potatoes in a large pot. Cover with water and bring to a boil.
Reduce heat and simmer until potatoes are tender. Drain and cool
slightly. Cut into quarters and place in large bowl.
In the bowl, add ham and the next 7 ingredients to potatoes. Toss
gently to combine. Sprinkle parsley on top.
Serve chilled or at room temperature.
