6 medium potatoes, boiled, cooled, peeled, grated
1/3 c. chopped onion
2 c. shredded cheddar cheese
1/4 c. margarine
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. butter
1 1/2 c. sour cream
Over low heat, combine margarine and cheese. Heat until melted and
remove from heat. Blend in all other ingredients except potatoes.
Then fold in potatoes.
Pour mixture into a greased 2 qt. casserole dish. Dot with butter.
Bake, uncovered, for 25 minutes at 350 degrees.
