1 acorn squash 1/2 lb. lean ground pork 1/4 c. chopped celery 1/4 c. chopped onion 1/4 tsp. salt 1/4 tsp. curry powder 1/2 c. unsweetened applesauce 1 slice bread, cubed dash cinnamon Spray a 10x6x2-inch baking dish with cooking spray. Halve squash, discard seeds. Place cut side down on baking dish. Bake uncovered at 350 degrees for 50 minutes. Meanwhile cook pork, celery, and onion in skillet until no longer pink and vegetables are tender. Drain fat. Stir in curry powder and cinnamon. Cook 1 minute more. Stir in applesauce and bread cubes. Turn squash cut side up, fill with stuffing. Bake uncovered for 20 minutes.
