(Serves 6-8)

2 lb. sweet potatoes (cooked, peeled, cut into thick slices)
1 8-oz. can peach slices
1/2 c. brown sugar
1/3 c. cashews
1/2 tsp. salt
1/4 tsp. ground ginger
3 Tbsp. butter

Layer half of potatoes and peaches. Add second layer. Top with
sugar and spices. Bake at 350 degrees for 30 minutes, covered, and 10
minutes uncovered.
