1 c. water
2 garlic cloves, chopped
1 Tbsp. olive oil
1/2 c. uncooked couscous
1/4 c. chopped dried apricots
1/4 c. raisins
1 1/2 Tbsp. curry powder
1 tsp. cayenne pepper
1/8 tsp. salt
2 Tbsp. chopped pistachios
2 Tbsp. shredded coconut
1/4 c. chopped green onions
Bring water to a boil over medium in a 6-qt. saucepan.
Add garlic and olive and stir in apricots, raisins, curry powder,
cayenne, and salt. Bring to a boil again and remove from heat.
Cover with lid and allow to stand for 10 minutes.
Garnish with pistachios, coconut, and onion.
