BAKED OATMEAL BREAD

1 c. skim milk
2 tsp. ground cinnamon
1/2 tsp. table salt
1 tsp. vanilla extract
1/2 c. unsweetened applesauce
1 medium banana, mashed
1 1/2 tsp. baking powder
1/4 to 1/2 c. sugar substitute or regular sugar
2 c. oats, NOT instant
1/2 c. egg substitute (egg beaters)

Preheat oven to 350 degrees. Combine wet ingredients, including mashed
banana. Then add dry ingredients.

Bake in a sprayed 8-inch square pan for 35-45 minutes. The mixture
will still be wet but will set up after baking.

Keep refrigerated unless using right away. Serve warm or cold.
(This recipe freezes well.)
