IRISH SODA BREAD

(Makes great toast!!)

4 c. flour
2 c. buttermilk
1 1/2 tsp. salt
1 tsp. baking soda

Preheat oven to 375 degrees.

In a large mixing bowl, stir together dry ingredients. Add
buttermilk and stir briskly together with fork until dough holds
together in a rough mass. Pour out onto a lightly-floured surface
and knead for about 30 seconds, then pat into an 8-inch round about
1 1/2-inch thick. With a sharp knife, slice a large X on the top
of the round. Place in an 8-inch greased cake pan or on a greased
baking sheet. Bake for 45-50 minutes until it is light brown and
the X has opened up. Transfer to a rack to cool. Wrap it in a
damp towel and allow it to stand on the rack for at least 8 hours
to cool completely before serving.
