2 eggs 1 c. sugar 1/2 c. vegetable oil 1 tsp. vanilla 1 c. zucchini, chopped not shredded 1 1/2 c. flour 1/2 tsp. baking soda 1/8 tsp. baking powder 1/2 tsp. salt 1 1/2 tsp. cinnamon 1/2 c. chopped pecans or walnuts Beat eggs and sugar together. Stir in oil, vanilla, and zucchini. Sift dry ingredients together and add to zucchini mixture. Fold in nuts. Pour into a greased and floured 9x5-inch loaf pan. Bake in a preheated 350 degrees oven for 1 hour. Cool for 10 minutes before removing from pan.
