2 small or 1 large apples, chopped but not peeled
1 c. whole wheat flour
1 c. dry oatmeal
1/4 c. dry milk
1/4 c. wheat germ
1 1/2 Tbsp. baking powder
1 Tbsp. brown sugar
1/4 c. olive oil
1 1/2 c. milk
optional: raisins and walnuts
Mix all ingredients and stir in raisins and walnuts if desired.
Spray and preheat a griddle to Medium heat. Spoon about 1/4 c.
batter for each pancake onto griddle. Cook until bubbly. Turn and
cook until lightly brown. Keep warm.
