1 c. vegetable oil 1 3/4 c. sugar 3 eggs 2 c. flour, sifted 1 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 2 c. raw cooking apples, peeled and cut into small pieces 1 c. pecans (optional) Beat oil, sugar, and eggs until smooth. Add flour, cinnamon, salt, and baking soda. Mix together until smooth. Then fold in apples and nuts. Spread mixture into a greased 9x13-inch pan or a Bundt pan. Bake in a 375 degrees preheated oven for 35 minutes or until a toothpick, inserted into the center of the cake, comes out clean. Excellent when served with fresh whipped cream.
