1 large onion, chopped
1 clove garlic, minced
1 Tbsp. oil
1 lb. ground meat
2 large potatoes, cubed
1 28-oz. can tomatoes, cubed
1 20-oz. can green chiles, chopped
2 beef bouillon cubes, crushed
Place onion, minced garlic, and oil in a 2 qt. microwave safe
casserole. Microwave on High for 4-5 minutes. Add ground meat and
cook on High for 4-5 minutes more (or until meat is no longer
pink). Stir halfway through cooking time.
Add remaining ingredients. Cook on Medium power for 30-45 minutes
or until potatoes are done. Stir 2-3 times during cooking.
