3/4 c. corn
1 1/4 c. jicama, diced
1/2 c. green onion, sliced
1 avocado, diced
1 jalapeno, diced
2 Tbsp. vegetable oil
2 Tbsp. lime juice
2 Tbsp. cilantro, minced
2 tsp. cider or wine vinegar
1 tsp. salt
3/4 tsp. cumin
3/4 tsp. sugar
Mix together. Serve with scooped corn chips.
