Dressing: 1/2 c. olive oil 1/4 c. mayonnaise 1/4 c. grated Parmesan cheese (pregrated in a pack from the store) 1/2 c. minced fresh parsley 1 Tbsp. sugar 2 Tbsp. cider vinegar 2 tsp. black pepper 1 tsp. salt 1/4 tsp. red pepper flakes 1 clove garlic, pressed juice of 1 lemon Salad: 1 head romaine lettuce, roughly chopped 1/2 head iceberg lettuce, chopped 6 whole pepperoncini 1/2 c. whole black olives 1/2 c. red cherry tomatoes, cut in half 1/2 small red onion, very thinly sliced 1/3 c. grated Parmesan cheese For the Dressing: Combine all the ingredients for dressing in a blender; blend until pureed. For the Salad: Place the romaine and iceberg lettuce in a large bowl; toss with the dressing. Top the salad with the pepperoncini, olives, tomatoes and onion. Sprinkle with Parmesan at the end.
