2 (16 oz.) pkg. broccoli florets, cut in bite size pieces 1 c. raisins (white or dark) 1/3 c. finely chopped red onion 10 slices crisp cooked bacon, chopped Dressing: 1 c. mayonnaise 1/3 c. sugar 2 Tbsp. red wine vinegar 1/2 c. grated Parmesan cheese Pour boiling water over raisins; let soak for 10 to 15 minutes and then drain. Combine broccoli, raisins, onion and bacon. Pour dressing over the broccoli mixture; toss until coated. Cover and refrigerate overnight. Yields 8 to 10 servings.
