4 or 5 c. water 3 chicken breasts, cooked and shredded (save water to thin soup, if needed) 3 chicken bouillon cubes 1 bunch cilantro, chopped 1/2 tsp. cumin 1 tsp. adobo seasoning salt and pepper white rice, cooked lime Bring water to a boil; add bouillon cubes and stir to dissolve. Add cilantro, cumin and adobo seasoning. Simmer 20 minutes. Add potatoes; simmer 20 minutes, or until potatoes are done. Add shredded chicken. Salt and pepper to taste. To serve, place 1/2 cup rice in a bowl; ladle soup over rice and squeeze lime on top.
