1 head fresh cauliflower 1 qt. half and half milk 1 small jar minced pimentos, drained 1 qt. whole milk 1 lb. Velveeta cheese salt, pepper and hot sauce to taste Cut cauliflower into florets; discard the remaining cauliflower. Boil 2 quarts of salted water; add cauliflower. Blanch for about 5 minutes; discard water. Slowly warm the milk and half and half in a thick bottomed boiler pan. Slice the Velveeta into cubes; add cheese to milk. When cheese melts, add remaining ingredients. Cook on very low heat until cauliflower is slightly tender.
