1 large can crushed pineapple 1 c. sugar 2 envelopes unflavored gelatin 1/2 c. warm water 1 c. finely diced celery 1 (4 oz.) jar diced pimentos 2 c. shredded sharp Cheddar cheese 1 c. chopped pecans, toasted 1 c. mayonnaise Bring pineapple and sugar to boil; boil 3 minutes. Cool. Dissolve gelatin in 1/2 cup warm water; add to pineapple mixture while it is still warm. Add remaining ingredients to pineapple/gelatin mixture; stir well. Put in dish. Chill overnight.
