1 stick butter 1 can cream of chicken soup 1 (8 oz.) carton sour cream 3 c. cooked chopped chicken 1 sleeve Ritz crackers, crushed 1 Tbsp. poppy seed 1 tsp. lemon juice salt and pepper to taste Melt butter (1/2 stick) in bottom of casserole dish. Mix chicken, soup and sour cream together; put in dish. Put Ritz crackers mixed with other 1/2 stick of butter on top. Bake at 375 degrees for 30 minutes, or until bubbly.
