Coffee Rub:
3 Tbsp. ground coffee
1 Tbsp. kosher salt
1 Tbsp. brown sugar
2 tsp. paprika
1 tsp. black pepper
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. ground cumin
1/2 tsp. coriander
1/2 tsp. cocoa powder

Mop Sauce:
1 c. red wine
1 c. orange juice
1/3 c. balsamic vinegar
1 c. brewed coffee
1/2 c. Worcestershire sauce
1 Tbsp. hot sauce
2 tsp. coarse salt
1 tsp. black pepper

Rub the coffee rub on pork. Let marinate in refrigerator 8 hours or
overnight. Mix mop sauce. Grill or roast using mop sauce as needed.
