1/4 c. olive oil
2 cloves garlic, minced
2 ribs celery, sliced
1 (29 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1 (6 oz.) can water
1 tsp. salt
1/4 tsp. pepper
1 medium onion, chopped
1/4 tsp. oregano
1/4 tsp. nutmeg
1/2 lb. Italian sausage
1 lb. lasagna
1 lb. Ricotta cheese
1 c. Mozzarella, grated
1/2 c. grated Romano cheese
Heat oil in large saucepan. Add garlic and onion; saute 3 to 5
minutes, or until tender. Add celery, tomato sauce, tomato paste,
water, salt, pepper, oregano and nutmeg. Reduce heat and cook for 1
Prick sausage with fork and place in a baking dish. Bake at 375 degrees for
25 minutes. Prepare lasagna per package directions; drain. Grease
6-quart casserole. Layer lasagna, tomato mixture, Ricotta cheese,
Mozzarella cheese and sausage, ending with sauce and cheese on top.
Bake at 375 degrees for 30 minutes, or until cheese is golden.
