6 large eggs
1 1/3 c. half and half or heavy whipping cream
basic pie dough
kosher salt to taste
fresh ground pepper to taste
1/2 tsp. herbs de Provence
3/4 c. Mozzarella or Swiss cheese
a few pieces of sliced ham
handful of fresh spinach
1/4 c. onion, chopped
about 4 slices tomato, thinly sliced and patted dry
Preheat oven to 400 degrees. In a large mixing bowl, whisk eggs, half and
half, salt, pepper, herbs de Provence and onion; whisk until
combined. Place pie dough in 1-quart 10-inch quiche plate. Place
cheese on bottom, then ham and then spinach. Slowly pour egg
