TACO PIE

2 c. pancake mix
1 c. milk
2 eggs
2 c. chicken breast, cooked and shredded or ground beef
1/2 c. corn
1 c. enchilada sauce
2 c. Mexican cheese blend, shredded

Toppings:
shredded lettuce
diced tomatoes
olive slices
jalapeno peppers, sliced

Preheat oven to 400 degrees. Coat an 8-inch pie pan with nonstick cooking
spray. In a small bowl, whisk together the pancake mix, milk and
eggs; set aside. In a medium bowl, stir together the chicken (or
beef), corn and enchilada sauce. Pour the pancake mix in the pie
pan. Top with the chicken/beef mixture and then the cheese. Bake
for about 20 minutes until everything is golden and bubbly. Serve
with lettuce, tomatoes, olives and jalapenos.
