BLACK-EYED PEAS

3 or 4 slices bacon, cooked crisp
2 c. chopped onion
2 c. chopped green peppers
2 c. chopped celery
3 tomatoes, peeled and diced or 1 1/2 c. canned diced tomatoes
3 cans (15 oz.) peas
1 can Ro-Tel tomatoes (mild)
salt to taste
2 Tbsp. white vinegar

Mix all ingredients into a large saucepan; bring to a boil. Reduce
heat to low; simmer for 1 hour.
