2 medium white potatoes (unpeeled) 1/2 c. bread crumbs 1/4 c. fresh Parmesan cheese, shredded 4 Tbsp. butter, melted and divided Heat oven to 400 degrees. Mix 2 tablespoons of the melted butter with crumbs and cheese; set aside. Spread 1 tablespoon melted butter in small baking pan. Scrub potatoes. Slice bottom of potato so it will sit flat. Place a wooden skewer on either side of potato (wooden spoon handles work as well). This prevents slices from going all the way through. Slice thinly the length of the potato crosswise (careful not to slice all the way through). Place in prepared pan; fan out gently. Sprinkle with salt and pepper. Pat crumb mixture evenly on top of potatoes. Cover with foil. Bake 45 to 60 minutes (depending on size of potatoes). Let sit for 5 minutes before serving.
