3 lb. potatoes, peeled and cut up
1/2 c. butter
6 oz. cream cheese, softened
1 c. (4 oz.) shredded Cheddar cheese, divided
2 oz. jar diced pimentos, drained
1 small green pepper, finely chopped
1 bunch green onions, finely chopped
1/2 c. grated Parmesan cheese
1/2 c. milk
1 tsp. salt
Cook potatoes until tender. Mash and add butter and cream cheese.
Beat at medium speed until smooth. Stir in 1/2 cup Cheddar cheese
and next 6 ingredients. Spoon into greased pan. Bake at 350 degrees for 40
minutes. Sprinkle with remaining 1/2 cup Cheddar cheese; bake 5
minutes more. Yields 8 servings.
