HOPPIN' JOHN

(Rice and Black-Eyed Peas)

1/2 lb. bacon, cut into 1/2-inch pieces
1 medium onion, diced
2 (15 oz.) cans black-eyed peas with juice
3 c. water
2 c. uncooked rice

Brown bacon; cook onion in bacon grease until transparent. Place
uncooked rice, black-eyed peas (with liquid) and water in 4-quart
pan. Add onion/bacon mixture. Bring to a boil; reduce heat to
medium. Cook covered until liquid is reduced to top of rice. Allow
to stand covered 20 minutes. Serve with bread of choice and hot
sauce.
