SCALLOPED POTATOES

8 medium potatoes, cut up
1 small onion, chopped
1 tsp. salt

Mix and boil for about 5 minutes, or until potatoes are half done;
drain. Arrange potatoes in a buttered 2 to 3-quart baking dish.

Sauce:
3 Tbsp. butter (margarine)
3 Tbsp. all-purpose flour
2 c. milk
salt and pepper to taste
1/2 c. sharp Cheddar cheese

Melt butter; gradually stir in flour. Gradually add milk. Stir
until thick and smooth; stir in cheese. Pour sauce over potatoes.
Bake at 350 degrees for about 25 minutes, or until bubbly hot.
