2 tomatoes, sliced 2 zucchini, sliced 3 yellow squash, sliced 1 lb. mushrooms, sliced 1 large onion, sliced 2 c. Mozzarella cheese, shredded and divided 1/2 c. mayonnaise 2 Tbsp. butter salt and pepper to taste 2 frozen pie shells Preheat oven to 350 degrees. Melt butter in large skillet. Add squash, onion, mushrooms, salt and pepper; sauté until soft. Set aside. Pierce the bottom of pie shells; bake 5 minutes. Remove from oven. Layer tomato slices in the bottom of pie shells. Add mayonnaise to sautéed vegetables; mix well. Divide mixture evenly between the pie shells. Bake 20 minutes. Remove and top each pie with 1 cup cheese; return to oven. Bake until cheese is bubbly.
