Jiffy corn muffin mix 1 (10 oz.) pkg. chopped frozen broccoli, thawed 1 medium onion, chopped 1 c. fat-free cottage cheese or 1 c. shredded Cheddar cheese 1 c. lite mayonnaise 1 tsp. salt 4 eggs, beaten Preheat oven to 375 degrees. Grease a 9 x 13-inch dish, or 8 x 8-inch pan which makes a thicker bread. Mix all ingredients together. Pour into prepared pan. Bake about 40 minutes until done. Test with wooden toothpick. I usually press the middle with my finger and, if it feels firm, it should be done.
