ZUCCHINI BREAD

2 c. sugar
1 c. oil
3 eggs
2 c. zucchini, peeled and shredded
1 tsp. vanilla
3 c. all-purpose flour
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground ginger
1 tsp. ground cloves

Heat oven to 350 degrees. Grease and flour two 9 1/4 x 5 1/4-inch loaf
pans. Mix all ingredients together. Divide evenly between pans.
Bake for 1 hour 15 minutes.
