1/2 c. melted butter 2 c. sugar 2 large eggs 1 tsp. vanilla extract 2 c. all-purpose flour 1 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 4 Granny Smith apples, peeled and chopped 1 c. toasted chopped pecans Stir together first 4 ingredients in large bowl until blended. Combine flour, soda, salt and cinnamon and add to butter mixture; blend well. Stir in apples and toasted pecans (may use walnuts instead of pecans). Spread into greased 13 x 9 pan. Bake at 350 degrees for 45 minutes, or until wooden pick in center comes out clean. Cool and spread with Cream Cheese Icing. Cream Cheese Icing: 1 (8 oz.) cream cheese, softened 3 Tbsp. butter, softened 1 1/2 c. powdered sugar 1/8 tsp. salt 1 tsp. vanilla Beat cream cheese and butter.
