1 1/2 c. canola oil 2 c. sugar 3 eggs 3 c. plain flour, sifted tsp. of salt 1 tsp. soda 3 c. chopped apples 1 c. chopped pecans 2 tsp. vanilla a little cinnamon (optional) Mix oil and sugar together until well blended. Add eggs one at a time. Sift together flour, salt and soda; add gradually to egg mixture. Stir in apples, pecans and vanilla. Pour into a 10-inch Bundt pan that has been greased and floured. Bake at 350 degrees for 60 minutes. Mix everything with a mixer, except apples and pecans. Frosting: 1/2 c. butter 1 c. brown sugar 1/4 c. sweet milk 1 tsp. vanilla confectioners sugar In saucepan over medium heat, melt butter and sugar; add milk. Bring to a rolling boil; boil for 3 to 4 minutes. Cool and add vanilla. I sift in confectioners sugar at this point until it thickens a bit. Pour over cake once you take it out of Bundt pan. Enjoy!
