HARVEST CAKE

4 c. apples chopped fine
2 c. sugar
2 eggs
1 c. oil
3 c. flour
2 tsp. soda
1/4 tsp. salt
1 c. raisins
1/2 c. black walnuts or nuts
1 tsp. vanilla
2 tsp. cinnamon
1 tsp. cloves
1 small jar maraschino cherries

Chop apples fine and add sugar and vanilla. Let stand for 1
hour. Beat eggs and oil until creamy. Sift dry ingredients. Add
oil and eggs to apples, then add dry mixture. Add raisins and
nuts. Drain cherries and place on top. Bake in Bundt pan at 350
degrees for 1 hour.
