2 1/4 c. all-purpose flour
1/2 c. granulated sugar
1 c. butter - softened
1 1/2 c. packed brown sugar
3/4 tsp. baking powder
3/4 tsp. salt
3/4 tsp. vanilla
1/2 c. chopped walnuts
2 c. sifted powdered sugar
2 Tbsp. butter or margarine - softened
1 - (6 oz.) jar maraschino cherries - drained and chopped
(reserving 1/4 c. liquid)
Lightly grease a 13 x 9 x 2 inch baking pan; set aside. In a
large bowl, combine flour and granulated sugar; cut in the one cup
of butter until crumbly. Press into prepared pan. Bake at 350
degrees for 20 minutes. Meanwhile, in a mixing bowl, stir together
the eggs, brown sugar, baking powder, salt, and vanilla. Add
cherries and nuts. Spoon on top of baked crust. Bake for 25
minutes more. Cool on wire rack. Combine the powdered sugar, the
2 tablespoons butter, and enough of the reserved cherry liquid (3
to 4 tablespoons) to make icing of spreading consistency. Spread
on bars. Recipe makes approx: 48 bars.
