BANANA BLONDIES

1/2 c. plus 1 Tbsp. butter
1 c. brown sugar
1 egg
1 c. mashed bananas
1 1/4 c. flour
3/4 tsp. salt
1/2 tsp. vanilla
1 - (3-1/2 oz.) can of flaked coconut

Cream butter and brown sugar. Add egg. Then mix in mashed
bananas. Add flour, salt, baking powder, vanilla and coconut
(reserve 1/2 cup of coconut for topping). Mix well. Butter a 9 x
13 pan. Pour batter into pan.

TOPPING: Mix 1/2 cup coconut, white sugar, and tablespoon
melted butter together. Sprinkle over batter. Bake at 350
degrees for 35 - 40 minutes.
