POTATO SALAD

5 lb. white potatoes
6 boiled eggs - chopped
1 small onion - chopped
salt and pepper
1 1/2 tsp. celery seed
3 eggs
1 c. vinegar - cider
1 c. water
2 tsp. mustard
1/2 tsp. salt
1 1/2 Tbsp. flour
1 c. sugar

Peel and cube potatoes. Boil until just tender. Do not over
cook. Drain. Let cool. Combine drained potatoes, chopped eggs,
onions, celery seed, and salt and pepper to taste. Set aside.
Beat eggs, sugar, flour, mustard, until smooth. Add vinegar and
water. Cook until bubbly and thick. Let cool slightly, then add
potatoes mixing thoroughly with spoon.
