1 Roaster Chicken 2 Lemons Salt, pepper to taste Clean chicken and empty cavity. Salt and pepper skin to taste. (Salt helps to "set up" the skin). Roll lemons on the counter with your hand to soften insides. Use skewer to poke 25 holes in each lemon. Slice ends off lemons. Place lemons in the chicken cavity and seal the chicken with string. (DO NOT POKE HOLES IN THE SKIN OF THE CHICKEN.) Place chicken on rack in pan. Bake at 350 degrees uncovered and long enough to cook through. Check time on package or by weight.
