2 skinless chicken breasts (defrost and chop 1/2-inch) 1 c. apple juice (reserve 1/4 c.) 2 tsp. lemon juice 1/4 tsp. ginger 1/4 tsp. salt 2 tsp. cornstarch 1/2 c. chopped celery 1 Tbsp. raisins In small skillet, heat 3/4 cup apple juice. Add chicken, lemon juice, ginger and salt. Cover and simmer 20 minutes until chicken is done. Mix 1/4 cup apple juice with 2 teaspoon cornstarch (may remove chicken) stir into skillet, boil, stirring constantly, 1 minute. Add celery, raisins and chicken. Heat until hot.
