2 Tbsp. oil
2 skinless boneless chicken breast halves (cut into
1 inch cubes)
1 carrot sliced
1 pkg. frozen broccoli - thawed
1 tsp. minced garlic
12 oz. Angel Hair Pasta
1 tsp. dried basil
1/4 c. grated Parmesan cheese
Heat 1 tablespoon of oil in medium skillet with chicken. After
5 minutes remove and drain on paper towel. Heat remaining oil in
same skillet. Add carrots, broccoli and garlic. Begin cooking
pasta. While pasta is cooking add chicken broth, basil, and
Parmesan cheese to skillet. Return chicken to skillet and stir.
Reduce heat and simmer for 4 minutes. Drain pasta, place in a
large bowl, top with chicken and vegetable mixture. Serve
immediately. Recipe makes approx: 4 servings.
