1/4 c. flour 2 tsp. salt 1/4 tsp. pepper 2 lb. beef stew cubes 1/4 c. oil 2 1/2 c. water 1 medium to large onion 6 medium potatoes Mix flour, salt, and pepper together, then coat beef cubes in flour mixture. Cook cubes in 1/4 cup oil in skillet until all cubes are browned. Remove beef cubes to a large casserole dish. Stir remaining flour into oil in skillet, cook 2 to 3 minutes, stirring constantly. Add the 2 1/2 cups water gradually, and heat to boiling, stirring. (Mixture should be watery). Pour gravy over beef cubes in casserole dish. Cover and bake at 350 degrees for 1 1/2 hours. During last half hour of baking time, prepare vegetables. Add vegetables to meat in casserole dish, stir well, and return to oven. (If gravy seem too thick, add a little water). Bake 1 more hour or until vegetables are tender. Recipe makes approx: 6 - 8 servings.
