4 - 1 1/2 inch thick pork chops 1/4 c. butter 2 garlic gloves, minced 1 medium onion, chopped 1/2 c. celery, chopped 1/4 c. flour 1/2 c. green pepper, chopped 2 c. soft bread crumbs 1 c. beef or chicken broth Salt and pepper Cut slits into each pork chop for stuffing. In a skillet saute garlic, onion, celery, and green pepper in butter until soft. In a large bowl, mix the above with bread crumbs. Add half of broth to moisten. Add salt and pepper. Stuff each pork chop with 1/4 of mixture. Close pork chop with wooden toothpick. Sprinkle with salt, pepper and flour. Melt remaining butter in skillet. Add stuffed pork chops. Brown quickly on both sides. Place pork chops in 9 x 13 inch baking dish and add 1/2 cup broth. Cover with lid, place in oven, and bake at 350 degrees for 30 to 40 minutes or until chops are thoroughly cooked.
