1 1/2 c. hot chicken broth 1/2 c. uncooked rice 1/4 tsp. Italian seasoning 1/4 tsp. garlic powder 1 pkg. (10 oz.) frozen chopped broccoli thawed and drained 1 can Durkee French Fried Onions 1 Tbsp. Parmesan cheese 1 lb. unbreaded fish fillets (thaw if frozen) Bake in 8 x 12 inch baking dish. Combine hot broth, uncooked rice and seasonings. Bake for 10 minutes. Take out and top with broccoli, 1/2 can french fried onions, and parmesan cheese. Place fish fillets diagonally down center of dish. Sprinkle fish lightly with paprika. Bake covered at 375 degrees for 20 - 25 minutes. Take out and top fish with cheddar cheese and remaining onions. Bake an additional 3 minutes. Recipe makes approx: 4 servings.
