3 Tbsp. olive oil 1/4 c. chopped onions 2 cloves garlic - chopped 1/2 c. white rice 1/3 c. Orzo or other small pasta 1 - (14 oz.) can chicken broth 1/2 c. water 1/2 to 1 c. chopped frozen spinach Saute onions in oil over medium heat until clear (do not brown). Add rice and pasta, stir until pasta becomes slightly brown. Add garlic, stir (do not brown garlic). Add broth, water, and spinach; stir, cover, reduce heat and simmer. Add some black pepper. (Be cautious with salt, since there is salt in the broth.) NOTE: This is a versatile recipe. You may use broken spaghetti pasta. You can replace water with white wine, and replace the spinach with green peas. You can use scallions, and use more or less garlic as you prefer.
