ZUCCHINI PIE

4 c. zucchini
1 c. onion - chopped
2 Tbsp. parsley
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic
1/4 tsp. basil
1/4 tsp. oregano
2 eggs - beaten
8 oz. shredded cheese
1 pre-made pie shell

Cook 4 cups zucchini and 1 cup chopped onion for 10 minutes.
Drain. Stir in 2 tablespoons parsley, 1/2 teaspoon salt, 1/2
teaspoon pepper, 1/4 teaspoon garlic, 1/4 teaspoon basil, and 1/4
teaspoon oregano. Combine 2 beaten eggs and (8 oz.) shredded
cheese. Stir into zucchini mixture. Pour into a pre-made pie
shell in an ungreased pie pan. Bake 350 - 375 degrees for 18 - 20
minutes. Cover with foil and bake an additional 10 minutes.
