8 medium potatoes - boiled in skins and cubed 1/2 c. chopped onion sauteed in oleo 1 lb. Velveeta cheese (Mild Mexican) - cubed 1 small jar Pimentos - drained 3 slices bread - cubed 2 sticks oleo - melted 1 tsp. garlic salt 1 tsp. paprika 1 tsp. parsley flakes Place potatoes in large casserole dish. Layer with onions, bread cubes, spices, pimentos and cheese. Drizzle oleo over all and bake at 350 degrees for 20 minutes.
